No bake cookies have been around for ever, and vary from recipe to recipe. I happen to like the recipe I use, an old recipe I updated and improved upon by adding nuts, coconut and honey. Kids of all ages just seem to love no bake cookies and they are so easy to make. I am not sure these would fall under health food, but they do taste great.
THINGS YOU WILL NEED
2 cups sugar
1/4 cup baking cocoa
pinch of salt
1/2 cup whole milk
1/2 cup peanut butter
1 stick butter
1/2 cup coconut flakes
3 cups quick oats
1 teaspoon vanilla
1/2 cup chopped nuts (walnuts or almonds)
1 teaspoon honey
In a large pot, bring to a low boil the sugar, cocoa, salt, milk, peanut butter, honey, and butter. Boil for 3 minutes on low boil.
Remove mixture from heat.
Stir in rolled oats, vanilla, coconut flakes and chopped nuts. Stir well.
Drop by tablespoon onto wax paper to cool.
Once cooled, enjoy,. They make the perfect snack.
I like to use chopped walnuts or almonds.
If you or your kids don’t like coconut flakes, you can leave them out of the recipe.
