This is a fairly easy meal to make and is also very flavorful as well. In this recipe I like to use cream of mushroom soup, but I think cream of chicken soup would word just as well if you don’t like mushrooms. I’m pretty sure cream of celery soup would also work in this recipe. The only thing you need to add is dinner rolls and vegetables.
THINGS YOU WILL NEED
1 1/3 cups minute rice
1/2 cup dry onion soup mix
1 can cream of mushroom soup
4 to 5 chicken drumsticks or thighs
1 1/4 cup boiling water
1 seeded and chopped up bell or sweet pepper
melted butter or margarine
salt, pepper and paprika to taste
Preheat oven to 375
In a large casserole dish, combine all of the ingredients except for the chicken, melted butter and seasonings (salt, pepper, paprika)
Brush chicken pieces with melted butter or margarzine. I always use either chicken drumsticks or thighs, but you can use any chicken pieces.
Now season the chicken pieces with salt, pepper and paprika to taste.
Now place your chicken pieces on top of the rice.
Now cover up the casserole with a lid or with some foil, and place into your preheated oven.
Allow to bake for 1 hour and 15 minutes.
Carefully remove from oven and allow to cool a bit.
Serve along side dinner rolls and vegetables.
I like to use a sweet pepper in my recipe, but green bell peppers work just as well.
