How to cook Thai Chicken barbecue

This recipe really sounds yummy. For those who love to eat chicken barbecue, this Thai chicken barbecue is a good one. There are different ways of cooking chicken barbecue and this is one of the best that many people are looking for in the Thai restaurant. You can make your own and let your family enjoy this in the comfort of your own home. No need of going to the restaurant just to have this type of chicken barbecue. Here's what you need to make your own.

1/2 cup firmly packed brown sugar

1/2 cup low sodium soy sauce

2 tablespoons fresh lime juice

6 cloves garlic, minched

1 teaspoon crushed red pepper

3/4 teaspoon curry powder

2 (3-pound) broiler-fryers, cut up and skinned

vegetable cooking spray

Green onion fans ( optional)

Procedure:

1.  In an extra-large zip top heavy- duty plastic bag, combine the first 6 ingredients. Brown sugar, soy sauce, fresh lime juice, garlic and curry powder. Add the cut chicken. Seal the bag and marinade in the refrigerator for about 4 hours, turning occasionally.

2.  Remove the chicken from marinade and reserve the marinade sauce. Transfer the mariande into a saucepan and bring to boil.  As soon as the marinade is boiling, reduce heat and simmer for about 3 minutes then remove from heat.

3. Prepare your grill rack. Coat the grill rack with cooking spray. Place on grill over medium-hot coals. Place the chicken on rack and cook for 20-25 minutes or until chicken is done, turning and basting frequently with marinade.

4. When the chicken is done, transfer into a serving platter, garnish with green onion fans, if desired. Yield 12 servings. This chicken barbecue is good with rice. Enjoy.
