Here's what you need to make your own.
1/2 cup firmly packed brown sugar
1/2 cup low sodium soy sauce
2 tablespoons fresh lime juice
6 cloves garlic, minched
1 teaspoon crushed red pepper
3/4 teaspoon curry powder
2 (3-pound) broiler-fryers, cut up and skinned
vegetable cooking spray
Green onion fans ( optional)
1.┬á In an extra-large zip top heavy- duty plastic bag, combine the first 6 ingredients. Brown sugar, soy sauce, fresh lime juice, garlic and curry powder. Add the cut chicken. Seal the bag and marinade in the refrigerator for about 4 hours, turning occasionally.
2.┬á Remove the chicken from marinade and reserve the marinade sauce. Transfer the mariande into a saucepan and bring to boil.┬á As soon as the marinade is boiling, reduce heat and simmer for about 3 minutes then remove from heat.
3. Prepare your grill rack. Coat the grill rack with cooking spray. Place on grill over medium-hot coals. Place the chicken on rack and cook for 20-25 minutes or until chicken is done, turning and basting frequently with marinade.
4. When the chicken is done, transfer into a serving platter, garnish with green onion fans, if desired. Yield 12 servings. This chicken barbecue is good with rice. Enjoy.
