The main trick to success when making minestrone soup is to cook it slowly in order to allow the flavors to blend sufficiently. When made with fresh, unprocessed ingredients and served with whole wheat bread and a side salad minestrone soup is among the healthiest meals around and should be incorporated into family meal planing year-round as a low calorie alternative to greasy burgers or pizza. Here's a great recipe for tasty minestrone soup:

Step 1: The basic foods for this soup are
24 ounces of beef stock
2 pieces of celery chopped
1 large carrot sliced thin
1 pound of diced tomatoes
1 medium onion diced finely
8 ounces elbow macaroni
1 tablespoon olive oil
1 cup fresh swiss chard chopped
1 cup spinach chopped
6 ounces of chopped cabbage
1 ounce fresh parsley
1/2 teaspoon each of salt, black pepper, garlic salt, rosemary, thyme and oregano

Step 2: In a frying pan place the olive oil, carrots, celery, onion, beef stock and cabbage, and then place on medium heat stirring occasionally for 10 to 12 minutes. When cooked place the contents of the frying pan into a soup pot along with the remainder of the ingredients except the macaroni - cover and let come to a boil on medium heat.

Step 3: When the mixture boils add the macaroni and simmer on low heat for another 25 to 30 minutes before serving.
