How To Make Carrot Soup

Introduction: While carrots may not be the most favored vegetable flavor of everyone, carrot soup if made properly can become a staple creation in any household. The most basic recipe for carrot soup is a simple one, but there are a few tricks that can make the soup more edible for those that may not like carrots in general. The main idea is to combine enough seasonings with the carrots, parsnip and chicken broth to allow the sweetness of the carrots to shine through. When this is accomplished and the consistency of the soup is neither too smooth or too chunky the carrot soup will be certain to be well received.

Step 1: Gather these key ingredients

5 large carrots diced into small pieces
1 parsnips diced fine
1/2 medium onion diced
12 ounces of chicken broth
16 ounces of water
2/3 of a stick of salted butter
1/2 teaspoon each of salt, black pepper, oregano, parsley and thyme

Step 2: In a soup pot place all of the ingredients except for the butter, cover with a lid and place on medium heat for about 1 hour and 15 minutes. Remove from heat when vegetables are soft and add the butter.

Step 3: Next, take a potato masher and quickly mash the ingredients to the proper consistency. Serve with a salad and fresh bread.
