How To Make Cranberry Softies

Introduction:  Cranberry Softies are soft drop cookies tangy with bits of fresh or frozen cranberries and flavored with orange peel. Bake these cookies anytime of the year to replenish your empty cookie jar. They are quick and easy to prepare and a good time to spend quality time with the kids by letting them help.  Enjoy!!

 

You Will Need:

1/4 cup butter or margarine - room temperature

3/4 cup packed brown sugar

1 egg

1 teaspoon vanilla

1 tablespoon grated orange peel

pinch of salt

1 1/2 cups all purpose flour

1/2 teaspoon baking soda

1/2 cup chopped walnuts

3/4 cup chopped fresh or thawed and drained frozen cranberries

a medium bowl

greased baking sheets

electric mixer

Step 1.  Preheat oven to 375 degrees. In bowl, with mixer, beat together butter, brown sugar, egg, vanilla, orange peel and salt until light and fluffy. Gradually add flour and baking soda beating until well blended. Stir in walnuts. Carefully fold in cranberries.

Step 2.  Drop cookie dough by rounded teaspoonsful, 2 inches apart, on baking sheets. Bake for 10 to 12 minutes or until golden brown. Remove cookies from baking sheets; cool on racks. Makes about 48 (2-inch) cookies.

 

Tips:  When dropping cookie dough by teaspoonsful, use a tableware teaspoon, not a measuring teaspoon.

Warnings:  Do not overbake or cookies will be dry and hard.
