How To Make Oatmeal Raisin Cookies |

Introduction: Oatmeal Raisin Cookies are drop cookies. These are large and chewy and a favorite with everyone. This recipe is for 3-inch cookies, but you can make them very small or saucer-size or anywhere in between. If your kids are like mine, they'll appreciate having a single giant cookie tucked in their lunch box for a change of pace. Enjoy!!
You Will Need: 1/2 cup butter or margarine - room temperature 1/2 cup vegetable shortening 1 cup packed brown sugar 3/4 cup granulated sugar 2 eggs 2 teaspoons vanilla 1 3/4 cups all purpose flour 1/2 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 2 cups rolled oats 1 1/2 cups raisins a large bowl ungreased cookie sheets electric mixer Step 1. Preheat oven to 350 degrees. In bowl, with mixer, beat together butter, shortening. brown sugar, granulated sugar, eggs and vanilla until light and fluffy. Gradually beat in flour, salt, baking soda and baking powder until thoroughly blended. Stir in oats and raisins. Step 2. Drop cookie dough by rounded tablespoonsful, 3 inches apart, on cookie sheets. Bake 13 to 15 minutes or until lightly browned. Remove cookies from cookie sheets; cool on racks. Makes about 38 - 3-inch cookies.
Tips: Can use 1/2 cup flaked or shredded coconut if desired. When dropping cookie dough by tablespoonsful, use a tableware tablespoon, not a measuring tablespoon. Warning: Do not overbake or cookies will be hard and dry.
