How to Make Carrot Muffins for Breakfast

Carrot muffins are made with wholesome ingredients that are high in protein, antioxidants and fiber.  This delicious muffin tastes good served fresh from the oven or if leftover from a previous day serve at room temperature or you can warm in microwave for 10 seconds.  This recipe is quick and easy to make.  Set your alarm for one hour earlier and make a batch of fleshly baked carrot muffins for breakfast.

 

Step 1

Gather your ingredients for carrot breakfast muffin recipe

½ cup all-purpose flour

1 cup whole wheat flour

Âľ cup flaxseed meal

1 cup brown sugar

2 teaspoons baking soda

1 teaspoon baking powder

½ teaspoon salt

1 tablespoon cinnamon

½ teaspoon ground nutmeg

1 and ½ cup shredded carrots

2 medium sized apples fine diced without skin

½ cup of raisins

1 cup chopped pecans

Âľ cup low fat milk

2 eggs beaten or egg beater substitute

1 teaspoon pure vanilla extract

Step 2

Preheat your oven at 350’F.  While your oven is heating spray the muffin pan with Pam for baking or line the muffin pan with paper baking cups.

Step 3

Add dry ingredients; flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg to a large bowl and mix the ingredients well.   Next add the carrots, apples and pecans and mix with other ingredients in the bowl.

Step 4

In another bowl add the milk, beaten egg and the vanilla and mix well.  Pour the liquid mixture into the dry mixture and stir all ingredients so that batter is moist.  Fill the muffin cups ¾ full.

Step 5

Bake carrot breakfast muffins for 15-20 minutes.  This recipe makes 15 muffins.

Step 6

Test the muffins to see if they are cooked by inserting a toothpick in the center and pull out.  If there is no batter on the toothpick then the muffin is done.

Step 7

For a healthy afternoon snack or informal dessert add a cream cheese icing to the carrot muffin.  Here is the recipe:

1-8 ounce package of cream cheese

ÂĽ cup powdered sugar

½ teaspoon pure vanilla extract

Combine all ingredients in mixing bowl.  Use a hand mixer and beat until the icing is creamy.

Frost the muffins with icing and garnish with shredded carrots.  You are going to love the carrot muffins with cream cheese frosting.  They are a delicious treat for your family.

Tips:

This was my mother’s recipe.  She baked the carrot muffin mixture in vegetable cans and then served with honey whipped butter.
