How to Make Blueberry Streusel Muffin Recipe

I love a hot Blueberry Streusel Muffin right from the oven, slathered with real butter and a cup of my favorite coffee. Blueberry Streusel Muffins would be great for a special breakfast or brunch just for the ladies. You may use fresh blueberries or thawed frozen ones. You could easily substitute your favorite fresh fruit in place of the blueberries.

Ingredients needed to make Blueberry Streusel Muffins:
1/3 cup sugar
¼ cup butter
1 egg
2 1/3 cups flour
1 tablespoon plus 1 teaspoon baking powder
½ teaspoon salt
1 cup milk
1 ½ cups fresh or frozen blueberries, thawed

Topping Ingredients:
½ cup sugar
1/3 cup flour
½ teaspoon cinnamon
¼ cup butter, softened
1 teaspoon vanilla extract

Directions for making muffins:
Step 1: Combine 1/3 cup sugar and ¼ cup butter in a large bowl.
Step 2: Cream until light and fluffy.
Step 3: Add egg, beating well.
Step 4: Combine in a separate bowl: 2 1/3 cup flour, baking powder and salt.
Step 5: Add dry ingredients to creamed mixture alternately with milk; stirring well after each addition.
Step 6: Stir in vanilla extract.
Step 7: Fold in blueberries.
Step 8: Spoon batter into greased muffin cups; filling 2/3 full.

Directions for topping:
Step 1: Combine ½ cup sugar, 1/3 cup flour and cinnamon.
Step 2: Cut in ¼ cup butter until mixture resembles crumbs.
Step 3: Sprinkle on top of muffin batter.
Step 4: Bake at 375 degree for 25 to 30 minutes or until golden brown.

Yields: 1 ½ dozen.

Tips:
You could substitute your favorite fresh fruit in place of the blueberries.
