Looking for a great dessert for a baby shower, New Year's party, or just any special occasion? Consider making cake balls! Cake balls are fun, easy, and unique.  They are fantastic for any social event such as a bridal shower, housewarming party, banquet, etc.  You can make call balls in just about any flavor.  Below is the recipe for key lime cake balls.

To make these cake balls, you will need the following ingredients:

1 package of lemon cake mix

1/2 cup of lime juice (If you have key lime juice, great!, if not regular lime juice is fine)

1/2 cup of water

Zest (shavings from the lime peel) of 1/2 of one lime (Optional)

1/2 cup of canola oil

4 large eggs

1 (3 oz) package of lime gelatin

1 Jar of Cream Cheese Frosting

White Chocolate Bars for Dipping Chocolate

Sprinkles (Optional)

Follow these steps to make the cake balls:

1.  Preheat the oven to approximately 325 degrees.

2.  Mix the cake mix, lime juice, water, lime zest, jello, eggs, and vegetable oil together.  Stir well.

3.  Pour the mixture into a cake pan. (Be sure to spray with pan if necessary.)

4.  Bake for about 35 minutes.

5.  Set the cake aside and wait for it to cool completely. Use the fridge if necessary.

6.  Crumble the cake mixture and transfer into a mixing bowl.

7.   Add the jar of cream cheese frosting.  Stir well.

8.  Place the mixture into the refrigerator for about 10 minutes or so.

9.  Remove from fridge, and shape into small balls.  Place the balls onto a plate / dish covered with wax paper.

10.  Freeze balls for at least 2 hours.

11.  Melt the white dipping chocolate.

12.  Dip the cake balls into the white chocolate and set them aside.

13.  Add cake sprinkles over the chocolate if desired.

14.  Let the cake balls chill completely (allow the chocolate to harden) before serving.

15. Enjoy!
