Chicken Salad is delicious any time of the year. You can serve with crackers and fruit, in a tomato or avocado half, as a sandwich spread on croissant or your favorite bread, stuffed in large pasta shells, in cream puff shell, as a dip or any number of ways you come up with. I like to take a whole chicken and boil it and cut it up or use a rotisserie chicken you get at the grocery store. It is yummy both ways. Do not use the canned chicken, it just does not do justice to this recipe for Homemade Chicken Salad.
Ingredients needed to make Homemade Chicken Salad:
2 cups cooked chicken, cold and shredded
1 cup chopped celery
1 tablespoon lemon juice
Salt and pepper to taste
3/4 cup mayonnaise
2 hard-boiled eggs, chopped
Directions for making Homemade Chicken Salad:
Step 1: Cook chicken and chop or shred; let chill in refrigerator.
Step 2: Mix together in a medium bowl; shredded chicken, chopped celery, lemon juice, salt and pepper.
Step 3: Add mayonnaise, mix well.
Step 4: Fold in chopped eggs, combining into mixture.
Step 5: Serve on rolls, on a bed of crisp lettuce leaves, with crackers and fruit, in a tomato or avocado half, as a sandwich spread on croissant or your favorite bread, stuffed in large pasta shells, in cream puff shell or as a dip. You may use a whole chicken or chicken breast for this chicken salad, or a quick and easy way is to use a rotisserie chicken you get at the grocery store.
Make sure the chicken is cold before assembling salad.
I like to add two tablespoon of onion for the flavor.
You may need to add more mayonnaise, make sure chicken salad is moist.
