If your like me and try to watch your weight here is a recipe for you.This recipe is different from you traditional manicotti and better for your body.Using the low fat ingredients in the recipe will definetely give you piece of mind and still satisfy your pasta needs. 

    Things You'll Need: 10 dried manicotti shells 1 clove garlic, minced 2 tablespoons flour 1/4 cup sliced green onions 2 tablespoons margarine or butter 1 1/3 cups milk 1 beaten egg 1 cup shredded Swiss cheese 1/4 cup dry white wine 1 10-12 ounce bag frozen chopped spinach 1/2 cup ricotta cheese 1/2 cup grated parmesan cheese 1/2 cup crumbled feta cheese 1/8 teaspoon ground nutmeg 1/4 teaspoon finely shredded lemon peel

Boil manicotti noodles about 20 minutes or until tender.Drain well but do not rinse.Cool manicotti noodles in a single layer on a piece of wax paper.

In a saucepan cook green onions and garlic in margarine or butter until tender.Add milk.Cook and stir till thick and bubbly.Add Swiss cheese and wine and stir until the cheese is melted.

For the filling, in a mixing bowl stir egg,spinach,ricotta cheese,parmesan cheese,feta cheese,lemon peel and nutmeg.Fill the manicotti shells with filling.Arrange shells in a 2quart dish.Pour sauce over the filled shells.

Bake at 350 degrees,covered for 35 to 40 minutes.Voila theres your low fat manicotti. Serve and enjoy.

 

 

 

Tips & Warnings Lemon and garlic can be way over exagerrated so be sure to use precise measurements. Be cautious when baking and use pot holders.
