How to Make a One Pot Recipe- Italian Chicken

This delicious recipe cooks in under 1 hour and you do it all in one pot! Cooking in one pot means less cleanup for you.

What you will need to make this recipe that will serve 4 or 2 with leftovers.

A medium to large non-stick dutch oven with a lid.

2 boneless chicken breasts

1 tablespoon chopped garlic

2 teaspoons extra virgin olive oil

1 large can crushed tomatoes

2 teaspoon basil

salt and pepper

1/4 lb. thin spaghetti

3/4 cup chopped frozen spinach

Step 1- Slice the chicken into bite-sized slices.

Step 2- Brown the chicken and garlic in olive oil over a medium heat. (do not actually "brown" the chicken-cook until no longer pink)

Step3- Stir in the spinach, tomatoes, and basil. Mix well

Step 4- Break the spaghetti into thirds and add to the pot. Add 1 1/2 cans of water (use the large can from the tomatoes)

Step 5- Stir together. Cover and cook for about 15 minutes, stirring occasionally to keep spaghetti from sticking together.

Step 6- After 15 minutes, check the doneness of the pasta. Stir and allow to cook until desired tenderness. (approximately 5 to 10 minutes longer)

Step 7- When pasta is done, this one pot dinner is ready to serve.

Leftovers reheat well in the microwave. Enjoy!
