There is a reason that blueberries are considered a "power food." One cup of blueberries has only about 82 calories, over 3 grams of fiber, one-third of the recommended daily requirement of vitamin C, and some potassium. They do not contain, however, much sodium or fat.

All of this makes the little blueberry a great fruit to include in your diet. My daughter absolutely loves blueberries, which means that I am always trying different ways of making them. This recipe for blueberry pudding will satisfy the tastes of any blueberry lover, while being a pudding that is actually healthy and can be a dessert that can be enjoyed without guilt.

This recipe will serve 6.

Ingredients:

2 cups low-fat cottage cheese

2 cups blueberries

1 cup nonfat yogurt

3 tablespoons lemon juice

2 tablespoons honey

Directions:

How to Make Blueberry Pudding:

Step 1: Blend the cottage cheese until smooth -- about 3 minutes -- in either a food processor or blender.

Step 2: Add the blueberries to the cottage cheese and blend again until smooth and pour into a large bowl.

Step 3: Whisk in the yogurt, lemon juice, and honey.

Step 4: Divide the pudding mixture into custard cups and chill well before serving.
