Mexican Pile-On is served with Fritos, chili, beans, lettuce, tomatoes, cheese, coconut and other ingredients as you desire, on a bed of rice. This is a great recipe to serve buffet style to a large crowd or for a Mexican Fiesta theme party. You may prepare many of the items the day before. I have planned this meal many times for family and church gatherings. It is an easy party when everyone pitches in and brings a couple of items. It also makes a great meal for a fun-raiser. Serve a large Chocolate Sheet Cake and you will have an easy but delicious meal.
Ingredients needed for Mexican Pile-On:
4 lbs. ground beef
3 large onions, chopped
4 packages taco seasoning
1 small package pinto beans, cooked
1-14 ounce package rice, cooked
24 ounces crushed corn chips
16 ounces cheddar cheese, shredded
2 large onions, chopped
1 large head of lettuce, chopped
6-7 medium tomatoes, chopped
2-2 1/2 cups black olives, chopped
2-3 avocados, peeled and chopped
1-16 ounce sour cream
1-16 ounce picante sauce
1-18 ounce raisins
1 (7 oz.) pkg. coconut
2-2 1/2 c. pecan, chopped
Directions for making Mexican Pile-On:
Step 1: The night before serving; sort and wash pinto beans and place in pot to soak, cover with water.
Step 2: Drain soaking water from beans.
Step 3: Place in crock pot or in pot on stove top and cook.
Step 4: Brown beef and 3 large onions chopped.
Step 5: Drain off grease.
Step 6: Add taco seasoning and the amount of water in directions.
Step 7: Simmer about 2 hours.
Step 8: Cook rice.
Step 9: Chop lettuce, tomatoes, black olives and avocados.
Step 10: Shred cheddar cheese.
Step 11: Set bowls of crushed corn chips, cheese, onion, lettuce, tomatoes, black olives, avocados, sour cream, picante sauce, raisins, coconut and pecans in this order to serve buffet style.
Step 12: Guests serve themselves by layering the ingredients they desire.
Number Of Servings: 18-20 servings
Use this recipe for a large gathering. Have each family bring 2 or 3 items and line them up as stated.
This recipe may be increased to the number of serving you need.
You may delete any items that you do not like. I am not a fan of the coconut, olives or raisins!
For a shortcut you could add canned beans into meat mixture; I prefer fresh pot of pinto beans.
If you use the small corn chips, you will not need to crush them.
Use caution when chopping vegetables with knife.
