Okra is nutritious but many people don't like to eat it because of its slimy substance but there is a way to cook okra that eliminates the sticky substance in it and it taste good. Ingredients are simple and it is easy to make. You can try this and see the difference.
1 bunch of okra (preferably young okra)
2-3 tbsp olive oil
salt to taste
Step 1.Â Wash the okra thoroughly under running water.Â Do not cut the okraÂ just leave it whole.Â In a small kettle heat 2 cups of water to boil and blanch the okra. Do not over cook them.
As soon as they are cooked, drain the water and mash the okra with fork. You can choose to leave the seeds in them or take it out then set them aside.
Step 2.Â Put 1 cup of bread crumbs in a platter and set aside.Â In a small bowl, beat the egg thoroughly and putÂ salt in itÂ then set aside.Â Get ready to fry the okra. Set your stove inÂ medium heatÂ and put 2-3 tbsp of olive oil in your frying pan.
Step 3.Â As soon as the oil is heated, coat the mashed okra one by oneÂ in bread crumbs and dip it in beaten egg then fry in hot oil. Use spatula to turn the okra when it becomes brown. Use medium heat in frying to avoid burning.
Step 4. Prepare the platter to put yourÂ fried okra. Put paper towel on the platter to drain the excess oil from your fried okra. Serve it hot with mashed potatoes or rice.
You can also put ketsup on the fried okra as you wish. You can choose whatever you want to season your fried okra. Some used black pepper on them too.
