How to Make a Homemade Coconut Cream Pie

A big slice of creamy homemade Coconut Cream Pie can complete an elegant or a country home cooked meal. This pie is baked in a single crust pie that is filled with thickened coconut pudding made from milk, eggs, flour, vanilla, butter and sugar. You can top the pie with meringue or whipped cream. Homemade Coconut Cream Pie is a favorite dessert in the South.

Ingredients needed for Coconut Cream Pie:
1 cup sugar
½ cup flour
3 cups milk
4 eggs, separated
3 tablespoons butter or margarine
1/4 teaspoon salt
1 ½ teaspoons vanilla extract
1-3 ½ ounce can flaked coconut
1-9-inch pie shell
1 teaspoon vanilla extract
½ teaspoon cream of tartar
½ cup sugar

Directions for making Homemade Coconut Cream Pie:
Step 1: In a medium saucepan combine sugar, salt and flour.
Step 2: Stir in milk.
Step 3: Cook over medium- low heat stirring constantly until thickened.
Step 4: Reduce heat to low and cook 2 more minutes; stirring constantly.
Step 5: Remove from heat.
Step 6: Beat egg yolks slightly; gradually add 1 cup of hot mixture into the yolks.
Step 7: Return egg yolk mixture to the saucepan and bring to a gentle boil.
Step 8: Cook and stir for 2 minutes.
Step 9: Remove from heat; add butter and 1 ½ teaspoon vanilla extract. Mix well.
Step 10: Add 1 cup of the coconut.
Step 11: Pour into baked pie shell.
Step 12: Beat egg whites, ½ teaspoon vanilla, cream of tartar, and sugar in a medium mixing bowl until you have a stiff meringue.
Step 13: Spread over hot filling.
Step 14: Sprinkle remaining coconut over top of meringue.
Step 14: Bake in a preheated 350 degree F oven for 12 to 15 minutes.
Step 15: Cool.
Step 16: Cover and refrigerate until ready to serve.

Instead of topping with meringue and baking you may use whipped cream or cool whip and omit baking.

When cooking filling be careful of the hot filling popping up and burning your hands, use a long handled spoon for stirring.

I made this pie yesterday. It was very good.
I printed the recipe and was reading along as I assembled the ingredients. Then, I started to put them all together - well, I was a bit stymied when I got to the part where I was to add the salt. It did not appear in the ingredients list. Whut ... ???
