You will know the Christmas holiday is drawing near when we start making our Favorite Christmas Candy Recipes. I wanted to share just a few of my favorites. Candies are a great gift from the heart and kitchen for friends and family during the Christmas holidays.
Chocolate Peanut Butter Balls
Ingredients for Chocolate Peanut Butter Balls: 1 cup crunchy peanut butter 1/4 cup margarine or butter, softened 1 cup powdered sugar 2 cups Rice Krispies 1 1/2 cups semi-sweet chocolate morsels 2 tablespoons vegetable shortening 54 mini-muffin paper cups
Directions for making Chocolate Peanut Butter Balls: Step 1: In a large bowl combine together by hand or with an electric mixer powdered sugar, peanut butter, and butter or oleo. Step 2: Shape into balls using a rounded teaspoonful. Step 3: Place each ball into a paper cup. Step 4: Chill. Step 5: Melt chocolate morsels and shortening in small saucepan, over low heat, stirring constantly. Step 6: Spoon 1 teaspoon melted chocolate over each peanut butter ball. Step 7: Refrigerate until firm. Step 8: Store in airtight container in refrigerator.
Date Loaf Candy
Ingredients for Date Loaf Candy: 4 cup sugar 1 pound dates, chopped 1 cup pecans 1 cup milk 1 teaspoon vanilla
Directions for making Date Loaf Candy: Step 1: In a heavy 4-quart saucepan combine the sugar and milk. Step 2: Stir over low heat, not letting it boil, until the sugar is dissolved. Step 3: Turn the heat to medium and bring to a boil. Step 4: Add chopped dates and continue to boil until it reaches the soft ball stage, 238 degrees F. Step 5: Remove the pan from the heat and stir in butter, vanilla and pecans. Step 6: Cool to lukewarm. Step 7: Get a sheet of wax paper ready to pour candy onto. Step 8: Beat the candy with a large spoon until it becomes creamy and starts to thicken like fudge. Step 9: Pour the mixture out on the waxed paper and roll up into a long roll about 1½-inches in diameter. Step 10: Let Date Loaf harden. Step 11: Unroll the Date Loaf and cut into slices.
Martha Washington Candy Surprise
Ingredients needed for Martha Washington Candy Surprise: 2- 1 pound boxes powdered sugar 4 cups pecans, chopped 1 teaspoon vanilla ½ cup maraschino cherries cut into fourths ½ cup shredded coconut ½ cup butter, melted, 1 stick 1-14 ounce can sweetened condensed milk 16 ounces semi-sweet chocolate 2 tablespoons vegetable shortening
Directions for making Martha Washington Candy Surprise: Step 1: In a large bowl combine; powdered sugar, pecans, vanilla, maraschino cherries, coconut, butter and sweetened condensed milk; mix well. Step 2: Line a baking sheet with wax paper. Step 3: Roll mixture into 1-inch balls and place on baking sheet. Step 4: Chill. Step 5: Melt semi-sweet chocolate and vegetable shortening in a double boiler. Step 6: Use a wooden tooth pick, to dip candy balls into chocolate mixture and place on prepared baking sheet. Step 7: Chill until chocolate is set. Make about 4 dozen candies.
Chocolate Marshmallow Fudge
Ingredients needed to make Chocolate Marshmallow Fudge: 4 cups sugar 1- 5 ounce can evaporated milk ½ teaspoon salt 1 stick margarine 12 ounces semi-sweet chocolate chips 1 - 7-ounce jar marshmallow cream 2 cups pecans, chopped 2 teaspoons vanilla
Directions for making Chocolate Marshmallow Fudge: Step 1: Line a 13 x 9 x 2-inch baking pan with lightly buttered waxed paper or aluminum foil. Set aside. Step 2: Combine butter, sugar, salt and evaporated milk in a heavy 3-quart saucepan; bring to full rolling boil on medium heat, stir constantly. Step 3: Boil for 5 minutes on medium heat or until candy thermometer reaches 234°F, stirring constantly. Step 4: Remove from heat. Step 5: Stir in chocolate chips until melted. Step 6: Add marshmallow crème, pecans and vanilla; mix well. Step 7: Pour into prepared pan. Step 8: Cool at room temperature. Cut into squares. Makes about 4 dozen pieces.
Tips: Place candies in airtight container and freeze. Make great gifts for any occasion
Warning: When making hot candy syrup use caution, so you do not have a serious burn.!
