Intro:  Beef smoked sausage is delicious by itself, and there are many ways to use this meat. One of my favorite ways to serve beef smoked sausage is by using it in this recipe.

Beef smoked sausage is a tremendous meat buy. The package I used tonight, to make this recipe, was on a buy one get one free special. Wish I could buy all meat this way. Meat and pasta together make for a tasty and inexpensive meal.

Step 1:  Gather the ingredients to make beef smoked sausage and pasta.

1 pkg. beef smoked sausage (l lb. size)

1 tbsp. olive oil

1 medium size onion, sliced

1 or 2 medium size green peppers, cut in strips

1 medium size zucchini, sliced

1/2 box of rigatoni pasta (8 ounces)

1 can diced tomatoes

1 can tomato sauce

1/8 tsp. garlic powder

2 tsp. Italian spices

sugar to taste

Step 2:  Pour the olive oil into a large (12 inch) sauté pan. Cut the beef smoked sausage in 1/4 inch thick slices, and add them to the pan. Cook on low heat.

Step 3:  Prep and slice the onion, peppers, and zucchini. Add to the beef smoked sausage in the pan.

Step 4:  Cook the rigatoni according to directions on the package.

Step 5:  Stir the diced tomatoes and tomato sauce into the sausage and veggies in the sauté pan.

Step 6:  Add garlic powder and Italian spices to the pan and blend. Add sugar to your taste.

Step 7:  Serve the beef smoked sausage sauce over the rigatoni, and enjoy a quick and easy delicious home cooked meal.

Tips:  Summertime, use fresh tomatoes, if you have them. Just peel and dice them instead of the canned tomatoes.
