Chocolate No Bake Cookies

This is one of the simplest of my recipes. These cookies have always been a hit regardless of the occasion I made them for. Many times you will find you have all the ingredients in cabinet and can make them quick anytime you need them. They are great finger food snacks that kids and adults can enjoy.

Ingredients:

2 cups sugar

½ cup milk

½ cocoa

1 stick butter

¼ tsp. salt

1/3 cup peanut butter

2 ½ cups quick or instant oats

1 tsp. vanilla

1 cup nuts (optional)

Combine the first five ingredients in a pot. Stir them together and let the mixture come to a boil for at least 3 minutes. You will then add the other ingredients into the boiling mixture and stir until well blended. You will then need to drop by spoon onto wax paper. Allow the cookies to sit until they have hardened and then serve.

If you have to store the cookies before serving them, make sure to place wax paper between layers so the cookies do not stick together. Also do not drop the cookies to big onto the wax paper or they will be too big to hold and hard to eat. The nuts are a great addition, if you like them. Many times I do not use them due to the fact that many people are allergic to them and do not know that they are in the cookies.
