This recipe for Beef Enchilada Casserole is one I have had for a long time. It is an often requested dish. Served with a garden salad, dessert and you have a meal. This is an easy way to make enchiladas!

Ingredients needed for Beef Enchilada Casserole:
1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
2-3 jalapenos, chopped
4-5 cups water
2 packages of enchilada sauce mix
1 package taco seasoning mix
1-12 ounce can tomato paste
1-10 1/2 ounce can of cream of mushroom soup
1 pound cheddar cheese, grated
1 package of corn tortillas, approx. 15

Directions for making Beef Enchilada Casserole:
Step 1: Preheat oven to 325 degree.
Step 2: Brown ground beef until pink is gone.
Step 3: Drain dripping from meat.
Step 4: Add to meat; onion and garlic, mix well.
Step 5: Stir into meat mixture enchilada and taco mixes.
Step 6: Add tomato paste, mushroom soup and jalapenos; add water slowly.
Step 7: Cover and simmer about 45 minutes.
Step 8: In a 13 x 9 x 2-inch baking dish, spread a thin layer of meat sauce, alternate layers of sauce, tortillas and cheese; ending with cheese.
Step 9: Cover and bake for 45 minutes.
Step 10: Uncover and bake 15 minutes longer.
Serves 8-10 people.

Tips:
Serve Beef Enchilada Casserole with sour cream and salsa.
May add black beans and corn for a variation.

Warning:
Use caution when removing hot enchiladas from oven.
