In the summertime you always have more cucumber than you can eat fresh, so why not pickle a few. This easy 24 hour refrigerator pickle recipe will help you use some of them and give you ┬átasty pickles in 24 hours. These pickles will keep a month in the refrigerator.
Ingredients needed for Easy 24 Hour Refrigerator Pickles:
6 cups cucumbers, thinly sliced
2 cups onions, thinly sliced
1 1/3 cups sugar
1 1/2 cup vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/2 teaspoon turmeric, ground
Directions for making 24 Hour Refrigerator Pickles:
Step 1: Wash and slice cucumber and onions.
Step 2: In a large glass jar, alternately layer the sliced cucumbers and onions.
Step 3: In a sauce pan, combine sugar, vinegar, salt, mustard seeds, celery seeds and turmeric.
Step 4: Bring to a boil; stirring just until sugar is dissolved.
Step 5: Pour mixture in jar over cucumbers and onions.
Step 6: Cool slightly,┬á and cover tightly and refrigerate at least 24 hours before serving.
