How to Make Delicious Irish Barm Brack |

Irish Barm Ingredients you will need: 1/2 cup lukewarm milk 1 tsp sugar 1 tsp fresh yeast 2 cups all purpose flour 1 tsp nutmeg 1 pinch of salt 1 egg 3 tbsp butter 2 cups mixed dried fruit (currants, sultanas, raisins, candied peel) 2 tbsp caster sugar Step 1. Blend your yeast and the sugar and allow to froth up in the milk, which should be at medium to high heat. Sieve the flour, caster sugar and nutmeg and rub in your butter. Make a well in the center of your Barm Brack dough and add the yeast mixture and your beaten egg. Beat with a wooden spoon for about 10 minutes until a good dough forms. Step 2. Work your fruit and salt by hand; and then knead the dough. Put your Barm Brack dough in a warm bowl, cover and allow to rise in a warm place for about an hour until doubled in density. Step 3. Knead lightly and place in a lightly-greased 7 in cake tin and allow a further 30 minutes rising time. Bake near the top of a pre-heated oven at 400°F, for 45-50 minutes or until your cake tester comes out clean. On removing from the oven, your Barm Brack can be glazed with a sugar syrup made from 2 tsp sugar dissolved in 3 tsp boiling water. Cool on wire racks for about 30 minutes before serving. Enjoy your traditional Irish Barm Brack.
