How to Make Apple Mint Pesto |

  Intro: Traditionally pesto is made with sweet basil, garlic, parsley, pine nuts, and olive oil. I, however, tend to make a pesto with whatever herb in my garden happens to catch my eye or my taste buds. My husband grills a lot of pork, and I think that apple just goes extremely well with pork. This apple mint pesto, therefore, makes a good topping for pork or can be used as a dip instead of using barbecue sauce. You might find other uses for it, too. Ingredients: •2 cups apple mint leaves, loosely packed •3 ounces parmesan cheese, freshly grated •¼ cup pine nuts, toasted •½ cup extra virgin olive oil Step 1: Combine all of the ingredients except the extra virgin olive oil in a blender or food processor. Step 2: Chop in the blender over low speed. Step 3: While the blender or food processor is running, slowly add the extra virgin olive oil. Continue blending until smooth. If necessary, add more olive oil. Step 4: Season to taste and serve. Tips: •You do not absolutely have to add the pine nuts. •You can add 2-4 garlic gloves if you wish. •You might also want to stir in some finely-chopped pieces of apple after your pesto is ready to add more apple flavor and to give your pesto a little crunch.
