How to Make Chocolate Mint Silk Pie

how to make chocolate mint silk pieIntro:  I do not pretend to be a baker, but even I can make this chocolate pie recipe work.  I can actually say, too, that I made the crust myself, and I never make pie crusts!  This chocolate mint silk pie is really smooth, too.

Pie crust recipe:

Step 1:  Crush 1½ cups chocolate cookies.  You can buy any type of chocolate cookie that you like.

Step 2:  Stir into the crushed chocolate cookies ¼ cup melted butter.  Mix well.

Step 3:  Press the cookie mixture into the bottom and up onto the sides of a 9-inch pie pan.

Chocolate Mint filling recipe:

Step 1:  Melt 3 x 1-ounce squares of semi-sweet chocolate in a double boiler.  Allow it to cool.

Step 2:  Combine 1 cup sugar and ¾ cup softened butter or margarine in a mixing bowl.  Beat at medium speed, making sure to scrape the sides of the bowl often, until well blended.

Step 3:  Add the chocolate and ½ teaspoon peppermint extract to the sugar and butter.  Beat well on medium speed until blended.

Step 4:  Add 3 eggs and continue beating until light and fluffy.  (Remember to scrape the sides of the mixing bowl often.)

Step 5:  Spoon into the pie crust and place in the refrigerator.  Allow it to chill for at least 3 hours before serving.

Tips:

•You can cover the pie with whipped cream if so desired.

•I also like to garnish my chocolate mint silk pie with some fresh chocolate mint.

•Consider using chocolate mint cookies, such as the Girl Scout cookies, for your pie crust.
