Intro:Â I do not pretend to be a baker, but even I can make this chocolate pie recipe work.Â I can actually say, too, that I made the crust myself, and I never make pie crusts!Â This chocolate mint silk pie is really smooth, too.
Pie crust recipe:
Step 1:Â Crush 1Â½ cups chocolate cookies.Â You can buy any type of chocolate cookie that you like.
Step 2:Â Stir into the crushed chocolate cookies Â¼ cup melted butter.Â Mix well.
Step 3:Â Press the cookie mixture into the bottom and up onto the sides of a 9-inch pie pan.
Chocolate Mint filling recipe:
Step 1:Â Melt 3 x 1-ounce squares of semi-sweet chocolate in a double boiler.Â Allow it to cool.
Step 2:Â Combine 1 cup sugar and Â¾ cup softened butter or margarine in a mixing bowl.Â Beat at medium speed, making sure to scrape the sides of the bowl often, until well blended.
Step 3:Â Add the chocolate and Â½ teaspoon peppermint extract to the sugar and butter.Â Beat well on medium speed until blended.
Step 4:Â Add 3 eggs and continue beating until light and fluffy.Â (Remember to scrape the sides of the mixing bowl often.)
Step 5:Â Spoon into the pie crust and place in the refrigerator.Â Allow it to chill for at least 3 hours before serving.
â¢You can cover the pie with whipped cream if so desired.
â¢I also like to garnish my chocolate mint silk pie with some fresh chocolate mint.
â¢Consider using chocolate mint cookies, such as the Girl Scout cookies, for your pie crust.
