How to Buy Fresh Fish

When you buy fresh fish is important that the fish is as fresh as possible. There are several signs to look for when buying fresh fish. If the fish you plan to buy fails any of the tests below then don't buy it! Go to another market or plan on having something else for dinner.

Step 1:  LOOK AT THE FISH -- If the fish still has the head the fish eyes should be clear. The meat of the fish should be tight and bright and the flakes should not be separated. Flakes that are pulling apart or cloudy eyes are both signs that the fish is not fresh.

Step 2:  SMELL THE FISH -- Do not be afraid to ask the person behind the fish counter if you can smell the fish. You need to smell it to make sure it's fresh. Fresh fish should not smell fishy. It should smell more like the water it came from. So it should either smell like the ocean or a lake. If it smells like fish do not buy it.

Step 3:  TOUCH THE FISH -- The scales on the fish should be intact and should not flake off. Rub your hand along the fish to check the scales. Also poke the meat. The meat of the fish should bounce back and not leave a dent. If the scales are flaking off or if the fish meat does not bounce back when poked the fish is not fresh.
