Spinach-Mushroom Quiche Once you've tasted this mouth-watering spinach-mushroom quiche you will go back for seconds. It's just that good. Not to mentioned the nutritional ingredients that go to make up this delicious dish. How spectacular. Listed are the instructions on how to make this spectacular quiche. Enjoy! Instructions Things You'll Need: 1 deep dish pie crust; 1/2 cup diced onion; 6 large mushrooms, diced; 1 pkg. chopped frozen spinach, thawed; 1/2 cup milk; 2 eggs; 1/8 teaspoon nutmeg; 1 tablespoon paprika; 1 teaspoon lemon juice; 2 tablespoons butter; salt and pepper to taste; 12 oz pkg. shredded mild cheddar cheese Step 1 Preheat Oven 350 F Step 2 Brown pie crust in oven for 10-12 minutes. Remove from oven and let cool, set aside. Step 3 Meanwhile, cook frozen spinach according to directions per package. Drain thoroughly, and set aside. Step 4 In the meantime, melt 2 tablespoons of butter in skillet, add in chopped onions and mushrooms and saute' for 10 minutes. Step 5 Next, pour onions and mushrooms in bottom of pie crust, distribute evenly. Next, distribute spinach over vegetables evenly. And finally, sprinkle shredded cheese over spinach. Step 6 Beat together eggs, milk, and lemon juice. Stir in salt, pepper, and nutmeg then pour mixture over contents in dish. Garnish with paprika. Step 7 Place in oven and bake at 350 F for 50-60 minutes. Remove from oven and let cool. Yields 4-6 servings.
