Here is another Class A number 1 pastry in the Philippines. This "Royal Bibingka" as it is called in Tagalog (for which is the National Language of my country) and for which it means an sumptious type of cake that it is so soft and a little sweet filling of shredded of cheese on the top melted and wrap in banana leaves to ensure the smell and flavor of the "Royal Bibingka."
Some say within the histiry of this "Royal Bibingka" that the proper contents and flavor of this cake is soo different from those other cakes out there. The reason why it is called Royal Bibingka is because among the¬†huge amounts of cake¬†pastrys out there in the Philippines or in the world I consider this an Class A pastry in the Philippines especially the way it is formed and wraped in Banana leaves to ensure the flavor.
¬†Here I would like to explain the Necessary Tools that are¬†needed such as:
¬†A.) "2x9" Round Alimunium Foil
¬†C.) Measuring cups and Measuring Spoons
¬†D.) Bowl Mixer
¬†E.) Additional 2-3 bowl for seperating
¬†F.) Oven-Mitten gloves
¬†Now the necessary Ingredients needed which are:
¬†A.) 3 eggs
¬†B.) 3/4 cups of granulated sugar
¬†C.) 2 cups of all purpose Flour
¬†D.) 4 tsps of baking powder
¬†E.) 1 1/4 cups of coconut milk
¬†F.) 1/2 cups of grated cheese
G.) Banana leaves (Wilted)
Now for the fun part, performing the three steps:
¬†In Step 1:
¬†Firstly, crack the eggs and beat the eggs consistently until it becomes light and creamy in the bowl mixer then seperate. While consistently beating add the sugar gradually well after each addition. Sift the flour and baking powder together, but as while beating the dry ingredients mix in the 1 1/4 cups of coconut milk.
¬†In Step 2:
¬†Secondly, Pour the batter into an "2x9" layer of cake pans that have been greased and lined with the wilted bananas leaves. Pre heat the oven at 350 degrees F once the oven is heated up insert the pan into the oven and let it bake for 10 minutes.
¬†In Step 3:
¬†In the Final Step, when the 10 minutes are up, carefully take out the pans and sprinkle the top layer with the 1/2 cups of grated cheese. Then return it back to the oven and bake for an additional 20 more minutes. While it is being baked brush about twice with the Margarine to ensure the flavor. Then when finally cooked brush again with Margarine and psrinkle with sugar. For final deleciousness serve with freshly grated coconut.
¬†Here are some tips and advices that might come in handy:
¬†1.) Prepare already to grease the pan with butter or margarine and input the banana leaves, so it is ready for the batter to be inputed on.
¬†2.) When pouring the batter into the pan, measure about 5 cups of batter and pour carefully into the pan.
¬†3.) When mixing all ingredients mix the ingredients at a medium pace so the batter wont be in to much of an liquid form.
¬†Take some proper pre cautions such as:
¬†1.) Only one warning I can give is while touching the pans always handle with caution and at all times always use oven mittens or gloves¬† when handling hot surfaces.
¬† 2.) Also while brushing with margarine the top layer of the Bibingka carefully take out the pan and re insert again.
