How To Make Turkey Gravy

It is time once again for turkey. The following recipe for turkey gravy is easy to make and comes from turkey drippings.

1. After cooking turkey set aside. Take the turkey roasting pan and pour all drippings into a large measuring cup which will accomodate a quart of liquid. Leave all browned bits at the bottom of the turkey roasting pan. Allow the drippings to stand until the fat rises to the top. Spoon of all fat and reserve.

2. Add turkey stock until there are at least four cups of liquid in the measuring cup. Set the turkey roasting pan over medium heat possibly using two burners.

3. Add about six tablespoons of fat back in the roasting pan. Sprinkle six tablespoons of flour over the fat and blend together with a whisk. Stir the fat and flour for two minutes until golden brown. Pour the stock mixture and drippings in the turkey roasting pan and simmer for three minutes whisking often. You can season with pepper and salt or add a finally chopped onion. Enjoy!

Tips and Warnings: Be cautious not to burn yourself while removing the turkey roasting pan. Always use pot holders and watch children around any stove or oven.
