How To Make Ginger Beer

3lbs. of fresh ginger

3 liters of boiled water, cooled

2 lbs. sugar (put to taste)

Step 1. Clean the ginger then cut it up into small chunks.

Step 2. Grate the ginger, or use a food processor to mince the ginger using a little water

Step 3. Put the grated ginger and water into a large glass jar and cover it loosely.

Step 4. Store it in a cool place for at least 24 to 48 hours.

Step 5. Strain carefully then sweeten, the brown sugar will give it a nice dark color. You can also use white sugar which will give it a lighter color it all depends on your preference.

Step 6. You can then bottle and refrigerate it.

Step 7. You can also serve it over crushed ice.
