Attention all chicken salad lovers and greek lovers. Come try this delicious recipe for an all time classical chicken salad. 1. In a small bowl, whisk together one and one-half cups of extra-virgin olive oil, one-fourth cup of lemon juice, one egg, two garlic cloves finely smashed, one teaspoon of dried oregano, one-fourth teaspoon kosher salt and one-eighth teaspoon of black pepper. 2. Combine three cups of chopped boneless, skinless chicken breast, one head of ramine lettuce finely torn, three-fourths cup of Kalamata olives, thinly sliced and one small purple or red onion, thinly sliced tossing well. 3. Add enough dressing just to coat. Toss once again and sprinkle with feta cheese. This salad normally serves six people. Enjoy!
