 INTRODUCTION
My Ukrainian Grandmother used to make a dried pasta called tarhonya. This article provides an age old recipe for tarhonya also known as grated noodles.
Definition of Tarhonya from Wikipedia, the free encyclopedia: "Hungarian egg barley, called tarhonya in Hungarian, is an egg-based pasta grain in Hungary and Eastern Europe, originating probably from the influence of the Ottoman empire and the Turkish cuisine from tarhana or of Persian origin, similar to the Persian 'tarkhane.'"
We hope to publish more recipes, most of which are older, almost forgotten recipes from the index cards and cook books left to me by my late Grandmother. These are mainly ethnic recipes, for example, hungarian, polish, ukrainian, and many more.
INGREDIENTS
2 eggs 2 tablespoons water 3/4 cup to 1 cup flour 1 small onion chopped
INSTRUCTIONS
Step 1 - Combine 2 eggs and 2 tablespoons of water in a bowl.
Step 2 - Add 3/4 cup to 1 cup of flour to make dough.
Step 3 - Knead on lightly floured board until smooth.
Step 4 - Grate onto clean towel and let stand for 3 hours.
Step 5 - To cook, fry chopped onion until brown. Add tarhonya and brown. Add chicken broth or beef broth to moisten. Cover and simmer until its one. Add more broth as needed.
