INSTRUCTIONS

Step 1 - Use 2 egg yokes. Or, use 2 tablespoons dried whole egg plus 2 1/2 tablespoons water in place of whole eggs for baking.

Step 2 - Try 3 or 4 tablespoons cocoa added to 1/2 tablespoon fat as a substitute for 1 square (ounce) of chocolate.

Step 3 - Use 7/8 cup all purpose flour in place of 1 cup cake flour for baking.

Step 4 - Use 1/2 cup evaporated milk plus 1/2 cup water in place of 1 cup whole milk.

Step 5 - Substitute 4 tablespoons nonfat dry milk plus 1 cup water instead of using 1 cup of skim milk.

Step 6 - As a substitute for 1 cup sour milk for baking, try 1 cup sweet milk mixed with one of the following: 1 tablespoon vinegar, or 1 tablespoon lemon juice, or 1 3/4 teaspoons cream of tartar.

Step 7 - Out of sweet milk and baking power for baking? Use equal amounts of sour milk and 1/2 teaspoon soda per cup (each half tsp. soda with 1 cup sour milk used in place of 2 tsp. baking powder and 1 cup sweet milk).

Step 8 - Use up to 1/2 cup bran, whole wheat flour, or corn meal plus enough all purpose flour to fill cup as a replacement for 1 cup all purpose flour for baking breads.
