Spinach Stuffed Manicotti

Prepare Manicotti according to package directions, rinse under cold water and lay each piece on a non-stick flat surface.

Combine spinach, ricotta, 1/2 of the shredded cheese, egg, and spices in a large bowl and mix thoroughly.

Pre-heat oven to 350 degrees. Cover the bottom of a 9x13 inch baking dish with spaghetti sauce.

Stuff manicotti with spinach filling carefully, making sure not to tear pasta.

Place manicotti in baking dish.

Pour remaining sauce over manicotti. Sprinkle rest of mozzarella chesse over entire dish.

Bake, covered, for 15 minutes.

Remove cover, bake for additional 20 minutes.

Remove from oven; allow dish to cool 5 minutes.

Use a long spatula or similar object to handle the manicotti or pasta could burst open.
