How to Make Lemon Meringue Pie

Intro: Follow these steps to learn how to make lemon meringue pie.

 

Step 1: Gather the ingredients. For the lemon filling you will need 1 1/3 cups sugar, 1.5 cups water, ¼ teaspoon salt, 1/3 cup cornstarch, 3 tablespoons butter, 4 egg yolks, ½ cup lemon juice, a pre-baked pie shell, and 1 tablespoon finely grated lemon zest. For the meringue topping, you will need 4 egg whites, 2 tablespoons sugar, and a pinch of tartar.

 

Step 2: Add the egg yolks to a bowl and whisk.

 

Step 3: Add cornstarch, salt, water, and sugar to a saucepan and whisk well. Place the pan on medium heat and continue to stir until boiling. Let this mixture boil for a minute, then remove from heat, and slowly whisk half of this mixture into the egg yolks. Return the egg yolks and mixture back to the saucepan.

 

Step 4: Cook the egg and cornstarch mixture on low heat for 1 minute while stirring. Remove it from heat. Stir in the lemon juice, butter, and zest.

 

Step 5: Make the meringue topping and top the lemon filling while it is still hot.

 

Step 6: To make the meringue topping, place 4 egg whites and a pinch of cream of tartar into a bowl and beat well. Slowly add sugar while beating until stiff peaks form. Put this meringue topping on the lemon filling while the lemon filling is still hot.

 

Step 7: Bake for 10-12 minutes at 375 degrees Fahrenheit. Make sure you let the pie cool on a wire cooling rack before serving.

 

Step 8: Once cooled, serve, and enjoy!

 

Tips: When you use the 4 egg yolks to make the lemon filling, save the egg whites to make your meringue topping.

 

Warnings: The pie will be hot when removing it from the oven; use an oven mitt and place on a cooling rack for awhile before eating.
